Peanut Butter Oatmeal Chocolate Chip Cookies

These delicious cookies are packed full of peanut butter flavor with a subtle amount of oatmeal to add substance to the cookies without making the texture too chewy. My first go around these turned out more like breakfast cookies and the second batch went completely flat. Getting the ingredients just right for these cookies proved to be more of a challenge but the final version is a soft, fluffy cookie that I absolutely love. This recipe makes 12-15 cookies which is the perfect amount to share with a few friends or indulge yourself if you are having a rough week and just bake half the dough at once.

Ingredients
  

  • 1/2 stick butter
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup peanut butter
  • 3/4 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup oats
  • 1/3 cup chocolate chips

Instructions
 

  • Pre-heat oven to 350 F. In a stand mixer fitted with the paddle cream together butter and both sugars for 2-3 minutes until all mixed and fluffy.
  • Add the egg and vanilla to the mixing bowl and mix together with the butter mixture. Add peanut butter and mix until all creamy.
  • Add the flour, baking soda, baking powder, and salt. Slowly mix until just combined. Add oats and chocolate chips. Slowly mix until evenly distributed.
  • Scoop dough into 12 even sized balls spaced at least 2 cms apart on the cookie sheet. Bake for 9 minutes. Allow to cool on the pan for 1 minute after removing from oven. Move to a cooling rack.
