Avocado Burrata Toast

I love avocado and burrata so why not put them together on top of a crunchy piece of delicious sourdough bread, This quick and easy avocado toast is a great way to start the day. The burrata adds a little extra creaminess that makes this toast feel special without adding more work. You can make just a single serving or consider having some friends over for brunch to use up the full ball of burrata all at once.

Avocado Burrata Toast

Ingredients
  

  • 1/2 avocado
  • 1 lemon
  • 1 Tbsp everything but the bagel seasoning
  • 1/4 large ball burrata
  • 1 slice bread- prefer sourdough

Instructions
 

  • Toast the bread until nice and crispy and golden on the edges.
  • Mash up the avocado with a fork. Squeeze some lemon over top and mash all together.
  • Scoop the mashed avocado onto the toast and spread evenly across. Sprinkle with the everything seasoning to your liking.
  • Cut the ball of burrata into quarters. Place 1/4 of the burrata on top of the toast. Squeeze a little more lemon juice on top and sprinkle with the everything but the bagel seasoning.

Tips:

  • You will want to use the burrata in 1-2 days otherwise it can start to go bad. So consider meal planning and using it other recipes such on top of tortellini with pesto and tomatoes or in a salad.
  • Keep the leftover burrata in a dry container after cutting open. If you put it back in the liquid you will loose the creamy inside part.
