Swap your boring turkey sandwich for this Turkey Avocado Melt made with spicy chipotle mayo on a pretzel bun! The combination of the melty cheese and creamy avocado with the spicy mayo is a match made in heaven. Then throw in a side of homemade sweet potato fries and this lunch is anything but boring. The sweet potato fries are extra crispy by baking them in the air fryer, which also is a huge time saver. This entire lunch can be made and enjoyed in 30 minutes.


Turkey Avocado Melt and Sweet Potato Fries
Delicious turkey and cheese sandwich with chipotle mayo and avocado on a pretzel bun paired with homemade sweet potato fries made in the air fryer.
Ingredients
Turkey Avocado Melt
- 2 pretzel buns any shape should work
- 4 slices turkey
- 4 slices pepper jack cheese
- 1 avocado
- 1/2 cup mayonnaise
- 2-3 chipotle peppers
- 1 tsp adobo sauce
- 2 tsp lime juice
- 1/2 Tbp diced fresh cilantro
- 1/4 tsp black pepper
Sweet Potato Fries
- 1 large sweet potato
- 1 Tbsp olive oil
- 1/2 tsp coarse sea salt
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
- 1/4 tsp smoked paprika
Instructions
- Start by making the sweet potato fries since you can make the sandwich while the fries are cooking. Pre-heat the air fryer to 400 F. Cut the sweet potato into 2-3 pieces. Then cut each piece into several strips about 1/4-1/2 inch thick depending on your preference for fry size. Put the cut sweet potatoes into a bowl. Drizzle with olive oil and stir until evenly coated. Sprinkle the salt, garlic powder, pepper and paprika over the fries. Stir until the seasoning is even on all the fries.
- Place the sweet potato fries in the basket of the air fryer so that they are in a single layer. Cook for 15-16 minutes turning over halfway through. You'll want the fries crispy but not burned so be sure to check throughout the baking time and adjust as needed based on your air fryer. Remove from air fryer and sprinkle with a little more coarse sea salt while still hot.
- To make the sandwich cut the pretzel bun in half. Place one slice of pepper jack cheese on the bottom bun. If you have a sub length bun you can fold the cheese in half. Place two slices of turkey on top. Fold the turkey up so that it fits on the bun. Top with another slice of pepper jack cheese.
- Place the bottom bun and top bun with the inside facing up in a toaster oven. You can also place under the broiler of your oven. Toast for 2-3 minutes so that the cheese is all melted and the bun is nicely toasted.
- To make the chipotle mayo you will need a small can of chipotles in adobo which can be found in the grocery store in the Mexican foods aisle. There are usually some onions in the can that you can remove and just pull out the chipotle peppers. There will be some extra sauce at the bottom that you can add 1 tsp to the mayo. Cut up the chipotle peppers into small pieces. If you want a really spicy mayo use three chipotles but if you want it milder use two. Add the mayo, chipotles, adobo sauce, lime juice, cilantro and black pepper to the bowl of a food processor or blenderr. Blend for 20 seconds, scrap down the sides and then blend of 20-30 more seconds until you have a completely smooth consistency.
- Spread some chipotle mayo on the top bun and then layer half the sliced avocado. Place the top bun on the melted cheese and turkey. Cut the sandwich in half and enjoy. This recipe makes two sandwiches. You can make them both at once or make a fresh one and reheat the second half of the fries for lunch another day. The extra chipotle mayo is good in the refrigerator for 3-4 days. It makes a great sauce to dip the sweet potato fries in as well.
