Pumpkin Pie Overnight Oats with Pecan Topping

Pumpkin season is in full swing and these overnight oats are a great way to start your day with delicious pumpkin flavor. The creamy oats paired with chia seeds, yogurt and pumpkin make for a filling breakfast to power you through the morning. I love adding an extra crunch on top of overnight oats and these candied, spiced pecans add rich fall flavor and a sweet, crunch. These super easy to make oats are like pumpkin pie in a jar.

Pumpkin Pie Overnight Oats with Pecan Topping

Ingredients
  

Overnight Oats

  • 3/4 cups oats
  • 1/2 cup pumpkin puree
  • 1/4 cup Greek yogurt plain or vanilla
  • 1 cup vanilla almond milk
  • 2-3 Tbsp maple syrup
  • 1 Tbsp chia seeds
  • 1 tsp pumpkin pie spice

Candied Pecan Topping

  • 1/2 cup pecans
  • 1 Tbsp maple syrup
  • 1/2 Tbsp brown sugar
  • 1/2 tsp cinnamon

Instructions
 

  • Add all the ingredients for the overnight oats except for the chia seeds to a blender. Blend until all combined and creamy. Stir in the chia seeds and pour into a medium sized jar with a lid.
  • In a small skillet over medium heat combine the pecans, maple syrup, brown sugar and cinnamon. Stir until the nuts are hot and bubbly. Keep stirring for several minutes until the nuts are toasted. Remove from heat and allow to cool. Store the nuts in an airtight container until ready to use.
  • Put the oat mixture in the refrigerator overnight or for at least 4 hours.
  • When ready to eat scoop 1/3 of the oat mixture into a bowl and top with some of the nuts. Enjoy!
