I’m always looking for new ways to enjoy Colorado peaches in the summer, and this recipe is a great way to use up those peaches that might have been left on the counter a bit too long. Those extra ripe peaches are the star of this recipe and are perfect to use since you will peel off that slightly wrinkly skin. The muffin batter is pretty basic since the sweet peaches will bring lots of flavor and pair perfectly with the crunchy streusel topping. I kept this batch small so that you can enjoy them when they are fresh. These really are the best still slightly warm out of the oven. Make sure to not store in an air tight container as that will make the streusel topping soft. Learn from my mistake ha! I recommend just covering gently on a plate with plastic wrap.

Peach Streusel Muffins
Ingredients
- 3 Tbsp coconut oil
- 1/4 cup brown sugar
- 1/2 tsp vanilla extract
- 1 egg
- 1/4 cup vanilla greek yogurt
- 3/4 cup flour
- 1/2 tsp baking powder
- pinch of salt
- 1 cup diced peaches
Streusel Topping
- 2 Tbsp brown sugar
- 1/4 tsp cinnamon
- 2 Tbsp butter slightly softened
- 1/4 cup flour
Instructions
- Pre-heat oven to 375 F. Peel and dice 2-3 peaches over the mixing bowl so that the extra juice gets into the batter. In the bowl of a stand mixer fitted with the paddle attachment combine coconut oil and brown sugar. Add in egg and vanilla extract. Mix until all incorporated.
- Add the flour, baking powder and salt to the mixture. Mix until all the flour is absorbed in the batter.
- Add the diced peaches to the batter and gently stir so that the peaches are mixed throughout. Pour about 1/4 of cup of batter evenly into 8 liners in a muffin pan.
- Mix together the streusel topping in a small bowl by combining the brown sugar, cinnamon, and flour. Dice up the butter into small pieces. Add the butter to the other ingredients and with a fork mix the butter in so that it forms pea sized pieces. Top the muffins with the streusel topping.
- Bake the muffins at 375 F for 20 minutes. Remove from oven and place on a cooling rack for several minutes. Once slightly cooled enjoy!
- Store extra muffins on a plate loosely covered with plastic wrap. Do not put in an air tight container.
