Queso

The Super Bowl always calls for chips and queso! Well to be honest any Sunday football watching is reason enough for me to make queso 🙂 This scaled down version makes one bowl so you can still enjoy lots of other yummy super bowl snacks as well.

Ingredients
  

  • 1 jalapeno diced
  • 1/2 small onion diced
  • 1 Tbsp butter
  • 3/4 cup cream
  • 1 small can diced green chiles
  • 1/4 cup sour cream
  • 2 cups shredded cheese

Instructions
 

  •  Melt butter over medium-high heat in a small saucepan. Add diced onion and jalapeño if using fresh. Cook until soft about 5 minutes.
  • Add in green chiles and canned jalapeños if using. Cook for 1 more minute.
  • Add cream, bring to a boil and simmer for 5-10 minutes until slightly thickened. Add in sour cream and stir until sour cream is melted.
  • Slowly add in cheese, a handful at a time, whisking after each addition until the cheese is totally melted.
  • Serve with your favorite tortilla chips

Tips:
– You can use different cheeses in this but pick ones that melt well otherwise you’ll end up with a grainy queso which no one likes. Honestly the processed velveeta cheese makes the best consistency if you want to make a bigger batch.
– I used the hot green chiles but they come in mild and medium so you can adjust the heat. I also don’t drain the can so all the good juices get added into the queso too.
– When using canned jalapeños add in a little of the juice.
