When you are wanting something easy that doesn’t take much time or work to make this is the perfect middle of the week dinner recipe. It is still full of flavor but doesn’t require a lot of ingredients or steps to make. I recently discovered Aidells Cotija Cheese & Fire Roasted Poblano sausage and it is the star of this meal that brings everything all together. All you have to do is cut everything up and then let the air fryer do the rest!
Sheet Pan Sausage and Veggie Bake

Ingredients
- 1 red bell pepper diced
- 1 Poblano pepper sliced into thin bite sized pieces
- 5-6 red potatoes diced
- 1 package sausage- either chicken or beef works great
- 1 Tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cut up the vegetables and chicken sausage into bite sized pieces.
- Add the potatoes and peppers to a small bowl. Drizzle with the olive oil and then add the smoked paprika, onion powder, salt and pepper. Toss until all the pieces are evenly coated. Pour into a sheet pan.
- Air fry the vegetables for 10 minutes, stirring half way through. If you don't have an air fryer roast in the over at 400 F for 20 minutes
- Add the sausage to the pan and air fry for 6 more minutes. If doing in the oven roast for about 10 minutes. You might have to adjust the time until the potatoes can easily be pierced with a fork and the sausage is fully cooked.
- Remove from the air fryer and enjoy.
Tips:
- This recipe is super versatile that you can use different kinds of sausage or vegetables. I love too that it is all done in one pan and is made in less than 30 minutes.
- This makes great leftovers for lunch that can easily be reheated in the microwave or a toaster oven if you have one is even better since it keeps everything crispy.
