Sheet Pan Sausage and Veggie Bake

Ingredients
  

  • 1 red bell pepper diced
  • 1 Poblano pepper sliced into thin bite sized pieces
  • 5-6 red potatoes diced
  • 1 package sausage- either chicken or beef works great
  • 1 Tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Cut up the vegetables and chicken sausage into bite sized pieces.
  • Add the potatoes and peppers to a small bowl. Drizzle with the olive oil and then add the smoked paprika, onion powder, salt and pepper. Toss until all the pieces are evenly coated. Pour into a sheet pan.
  • Air fry the vegetables for 10 minutes, stirring half way through. If you don't have an air fryer roast in the over at 400 F for 20 minutes
  • Add the sausage to the pan and air fry for 6 more minutes. If doing in the oven roast for about 10 minutes. You might have to adjust the time until the potatoes can easily be pierced with a fork and the sausage is fully cooked.
  • Remove from the air fryer and enjoy.
