1Poblano pepper sliced into thin bite sized pieces
5-6red potatoes diced
1packagesausage- either chicken or beef works great
1Tbspolive oil
1/2tsp smoked paprika
1/2tsponion powder
1/2tspsalt
1/4tspblack pepper
Instructions
Cut up the vegetables and chicken sausage into bite sized pieces.
Add the potatoes and peppers to a small bowl. Drizzle with the olive oil and then add the smoked paprika, onion powder, salt and pepper. Toss until all the pieces are evenly coated. Pour into a sheet pan.
Air fry the vegetables for 10 minutes, stirring half way through. If you don't have an air fryer roast in the over at 400 F for 20 minutes
Add the sausage to the pan and air fry for 6 more minutes. If doing in the oven roast for about 10 minutes. You might have to adjust the time until the potatoes can easily be pierced with a fork and the sausage is fully cooked.
