I absolutely love biscuits and gravy, but don’t often make them since most recipes make at least a dozen biscuits. This recipe still gives you delicious homemade, flaky buttermilk biscuits but in a small batch of six. It’s perfect for kicking off a date day or just staying in and wanting something cozy and delicious for yourself. This recipe may seem simple but it’s still full of flavor and you can definitely adjust the spiciness to your personal preference. Biscuits and Gravy
Half a dozen buttermilk biscuits with spicy sausage gravy

Ingredients
Buttermilk Biscuits
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 4 tbsp cold butter
- 1/2 cup buttermilk
Spicy Sausage Gravy
- 1/2 lb spicy breakfast sausage
- 1 tbsp flour
- 1 cup half n half
- salt and pepper
- crushed red pepper flakes
Instructions
- Pre-heat over to 400 F and line a baking sheet with parchment paper.
- Make the biscuit dough by adding the flour, baking powder and baking soda to a medium bowl. Stir to combine. Cut the butter into quarters length wise and then into small cubes. Add the butter to the flour and using a pastry cutter or a fork combine the butter with the flour so that the butter becomes small little pieces. If you plan ahead freeze the butter and then shred using the large size of a cheese grater.
- Add the buttermilk and stir just until the dough comes together to form a ball. Flour a surface and turn the dough out. Flatten the dough into an oval that is 1/2 inch thick. Use the biscuit cutter or a floured glass to cut out 6 biscuits. You will have to bring the dough back together into a second oval but try not to work the dough too much when doing this.
- Place the biscuits about an inch apart on the baking sheet. Brush the tops with a little extra buttermilk. Bake for 15 minutes until starting to get golden brown on the top.
- While the biscuits are baking make the sausage gravy. Heat a medium skillet over high heat and cook the sausage until it is no longer pink. While cooking the sausage break it up into small pieces.
- Add the flour and stir until absorbed and there is no longer any white in the pan. Pour in the half n half and lower the temperature to medium high. Bring the liquid to a gentle simmer and stir until the sauce thickens. You want the gravy pretty thick but still able to be poured over the biscuits. Season with salt, pepper and crushed red pepper flakes.
- Assemble by adding two biscuits to a plate and topping with the gravy.
