Small Batch Brownie Bites
Six little two-bite brownies made with chocolate chips and a rich brownie batter

- 3 tbsp butter melted
- 3 tbsp brown sugar
- 1 egg
- 1/4 tsp vanilla extract
- 3 tbsp flour
- 2 tbsp cocoa powder
- 1/8 tsp salt
- 3 tbsp chocolate chips
Preheat oven to 350 degrees F. Grease the center six spots of a mini muffins pan with cooking spray and set aside.
Melt the butter and then add to a small mixing bowl. Add the brown sugar and stir with a whisk until the butter and sugar are combined. Crack an egg and whisk to combine the yolk and white. Only pour 3/4 of the egg into the mixing bowl. Whisk until combined with the butter and sugar and then add the vanilla extract.
Add the flour, cocoa powder, and salt to the mixture. Whisk until the flour and cocoa are all absorbed and you have a thick batter. Add the chocolate chips and stir until evenly distributed.
Use a small cookie scoop to transfer the batter into six spots on the mini muffin pan. Bake for 10 minutes. The center of the top might still be slightly gooey but you don't want to over bake them. They will still continue to cook a little when removed from the oven.
Allow to cool for a few minutes before flipping oven the pan. If any of the brownies seem stuck you can run a flat knife around the edges to help loosen them. Best enjoyed when still warm.
