Skillet Lasagna with Burrata

Simple layered lasagna made in a skillet and topped with mozzarella and burrata

Ingredients
  

  • 1 lb Italian sausage
  • 3 cupsq tomato juice
  • 2 tbsp tomato paste
  • 1/4 cup finely shredded romano cheese
  • 1 tsp garlic powder
  • 1+1/2 tsp Italian seasoning
  • 5-6 lasagna noodles
  • 1 cup shredded mozzarella
  • 3-4 balls burrata

Instructions
 

  • Pre-heat broiler to 500 degrees F. Heat the skillet over medium-high heat and add the sausage. Cook the sausage until browned and while cooking break up into small bite sized pieces.
  • Add the tomato paste and cook, stirring around the pan until soft and mixed with the sausage. Pour in the tomato juice and season with the garlic power and Italian seasoning. Wait until the sauce starts to gently bubble and then stir in the Romano cheese.
  • Break the lasagna noodles in half and nestle them into the sauce so that they are fully covered. You want to make sure you have noodles layered all over the skillet so fit as many in as you can. The last noodle you might have to break into smaller pieces to get it to fit.
  • Cook the noodles until al dente which will take about 20 minutes. While cooking make sure the noodles stay covered with the sauce. You will have to spoon some sauce over them or gently push them down to stay submerged.
  • Top with the mozzarella cheese and then break the burrata balls into 2-3 pieces and scatter over the top. Place in the oven and broil for 5 minutes until the cheese is all melted. Remove from oven and serve. Since this isn't as layered as typical lasagna, I dished it up doing two scoops on top of each other for more of the layered effect.
