Spicy Chorizo and Caramelized Onion Pizza

This individualized pizza recipe is one of my new favorite combos. One of my friends told me about a similar combo a few months ago and ever since then I have been dreaming about making this. It is so packed full of different flavors and textures that all marry together on top of a perfectly thin, crispy crust. The spiciness is layered throughout from the pepper jack cheese to the jalapenos and the chorizo. Then the sweet, caramelized onions add something totally different to balance it all out. Plus who doesn’t love a pizza topped with creamy burrata and drizzled with jalapeno ranch dressing. It might seem like there is a lot going on but it all compliments each other so well and is actually really easy to make. You just have to be patient with caramelizing the onions, but it is totally worth the extra time.

Spicy Chorizo Caramelized Onion Pizza

Ingredients

  • 1 artisan thin pizza crust I used Stonefire brand
  • 1/2 small sweet onion
  • 1/2 tbsp butter
  • 1/4 14 oz package of chorizo
  • 1/4 cup pizza sauce
  • 3/4 cup shredded pepper jack cheese
  • 1 jalapeno
  • 1 ball burrata
  • 2 Tbsp jalapeno ranch dressing

Instructions

  • Preheat oven to 425 degrees F. Prepare ingredients by thinly slicing half an onion, slice the jalapeno and shred the pepper jack cheese.
  • Heat a small skillet over medium-high heat. Melt the butter and then add sliced onions. Cook until the onions are soft and golden in color which takes about 15 minutes. You will want to stir the onions frequently so that they don't burn. Remove the onions from the pan.
  • Add the chorizo to the warm skillet and break up into bite sized pieces using a spoon. Cook until all the way cooked through and slightly crispy.
  • Assemble the pizza by placing the crust in the center of a sheet pan. Top with the pizza sauce and pepper jack cheese. Evenly spread out the onions, chorizo, and jalapenos on top. Bake for 6 minutes.
  • Remove pizza from the oven and tear the burrata into 4-5 pieces. Place on top of pizza and bake for an additional 3 minutes. Remove the pizza from the oven and drizzle with jalapeno ranch dressing.
