Peach and Brie Quesadilla

One of my favorite things about summer time in Colorado are the peaches. They are so sweet and juicy and I seriously could eat one every day when they are in season. I am always looking for new ways to enjoy these delicious peaches and one that I discovered several years ago is a peach and brie quesadilla. It is super easy to make and is the perfect easy week night dinner for one. The creamy, gooey brie paired with the sweet, juicy peaches wrapped in a buttery, crispy tortilla is a flavor combo you will want to enjoy over and over again.

Peach and Brie Quesadilla

Whole wheat tortillas filled with melted brie and sliced peaches.

Ingredients

  • 1 peach
  • 4 slices brie
  • 2 whole wheat tortillas
  • sprinkle brown sugar
  • 1 tbsp butter

Instructions

  • Peel the peach and cut into thin slices
  • Cut the brie cheese into 4 slices and then cut each slice in half
  • Assemble the quesadilla by placing the peaches and brie evenly on top of one of the tortillas. Sprinkle with brown sugar and top with the second tortilla.
  • Heat a skillet over medium heat. Once warm melt a small slice of butter and cover the bottom of the pan. Place the filled tortilla in the pan. Cook until crispy, about 3-4 mins on the first side.
  • Flip the quesadilla and cook for 3 mins on the other side until crispy. Remove the quesadilla from the pan and allow it to sit for a few minutes before cutting into 4ths. Enjoy but make sure you have a napkin as it's a juicy mess to eat but so good.
