Bang Bang Shrimp Bowl

This recipe is inspired by my sister. She made this delicious Bang Bang Shrimp appetizer for my mom’s birthday party that I could not stop eating. Since then I have been dreaming of how to recreate it and turn it into a quick, easy dinner. Well I finally gave it a try and considered this meal a total success. Crispy shrimp + spicy bang bang sauce + lots of veggies makes for one delicious meal. I also learned that dipping the shrimp first in cornstarch compared to flour makes for a crispier coating and also turns more golden in color when fried.

Bang Bang Shrimp Bowl

Crispy air fried shrimp layered with cauliflower rice, veggies and a delicious Bang Bang sauce

Ingredients

  • 12 large shrimp
  • 2 tbsp corn starch
  • 1/4 cup buttermilk
  • 1/2 cup panko breadcrumbs
  • spray cooking oil
  • 1/3 cup mayo
  • 1 tbsp sriracha
  • 1/4 cup sweet chili sauce
  • squeeze of lime juice
  • 12 cherry tomatoes
  • 1 cucumber
  • 1 avocado
  • 1 bag frozen cauliflower rice

Instructions

  • Prepare the shrimp by removing the outer shell and tail. Preheat air fryer to 400 F.
  • Coat shrimp by placing in a bowl with cornstarch and completely covering the shrimp. Then dip in buttermilk and place in a bowl with panko. Use a spoon to completely cover the shrimp in the panko. Place in the basket of the air fryer. Repeat with additional shrimp.
  • Spray shrimp with oil. Air fry for 5 minutes then flip over and cook for another 3-4 minutes until golden brown.
  • Make the bang bang sauce by mixing together the mayo, sriracha, sweet chili sauce and lime juice. Stir until all combined.
  • Cook the cauliflower rice in the microwave according to the package instructions. Cut the tomatoes in half. Slice the cucumber and cut the slices in half. I put about 6-8 pieces of cucumber in each bowl. Cut the avocado in half and then dice each half.
  • Assemble the bowls by placing half the cauliflower rice in each bowl. Top with the shrimp, tomatoes, cucumber, and avocado. Spoon the bang bang sauce over top everything and enjoy.

Notes

  • If you only want to make one serving you can just do half the shrimp at once. Ingredient photo below is for just one serving of the shrimp. 
  • I cooked up all the shrimp at once and then saved half for the next day. I reheated the shrimp in the air fryer for 3 minutes per side and it was still nice and crispy and tasted fresh. 
  • If you don’t have an air fryer you can cook in a large skillet over medium high heat in 2-3 T oil. Cook for a few minutes per side until golden brown then place on a paper towel to soak up extra oil before serving.
