Peanut Butter Chocolate Cookies

When that peanut butter and chocolate craving hits these are the perfect cookies to satisfy your craving. They are packed full of peanut butter flavor and include both milk chocolate chips and semi-sweet chocolate chunks. The melted chocolate makes these the ultimate peanut butter cookies that are best enjoyed fresh out of the oven. It makes just a dozen cookies so you won’t feel too guilty if you eat them all yourself!

Ingredients

  • 1/2 stick butter softened
  • 1/3 cup packed brown sugar
  • 2 tbsp white sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/3 cup creamy peanut butter
  • 1 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp milk chocolate chips
  • 3 tbsp peanut butter chips
  • 1/4 cup chopped semi-sweet chocolate bar

Instructions

  • In the bowl of a mixer cream together on medium-low (4) speed butter, brown sugar and white sugar until fluffy. Add the vanilla extract and egg and beat for 2 minutes on medium-low speed until all combined. Add the peanut butter and mix for 1 more minute.
  • With the mixer running on low (2) slowly add the flour, salt and baking soda. Mix just until the flour is absorbed.
  • Cut up part of a semi-sweet chocolate baking bar into small chunks and add to the cookie dough along with the peanut butter chips and milk chocolate chips. Gently stir to incorporate evenly throughout the dough.
  • Chill the dough at least for 15 minutes. When ready to bake pre-heat oven to 350 degrees F.
  • Use a large cookie scoop to divide the dough into 10-12 even sized balls. Place on a cookie sheet and bake for 9-10 minutes. With 3 minutes left in the baking time remove the cookie sheet and bang on the counter a few times to release any air in the cookies.
  • When finished baking remove from the oven and let sit on the cookie sheet for a few minutes before transferring to a wire rack to cool. Best enjoyed after they have cooled for about 10 minutes but the chocolate is still melted.
