If you are craving something sweet and chocolatey then this is the perfect recipe to indulge your craving. These small bath brownie bites make six little brownies made in a mini muffin pan that are perfect to eat right out of the oven when they are still warm and the chocolate chips are all melty. You can enjoy just a few alone or for a real treat pair them with some vanilla ice cream. They are really easy to make and only take 10 minutes to bake so you won’t have to wait long to satisfy your craving. This recipe was inspired by the brownies I used to make as a kid from this old cook book I was recently able to find online called “KidsCooking: A Very Slightly Messy Manual”. Their disgustingly rich brownies were one of the first things I learned how to make so I thought with this recipe we would keep things simple and go back to a childhood favorite.
Small Batch Brownie Bites

- 1 mini muffin pan
Ingredients
- 3 tbsp butter melted
- 3 tbsp brown sugar
- 1 egg
- 1/4 tsp vanilla extract
- 3 tbsp flour
- 2 tbsp cocoa powder
- 1/8 tsp salt
- 3 tbsp chocolate chips
Instructions
- Preheat oven to 350 degrees F. Grease the center six spots of a mini muffins pan with cooking spray and set aside.
- Melt the butter and then add to a small mixing bowl. Add the brown sugar and stir with a whisk until the butter and sugar are combined. Crack an egg and whisk to combine the yolk and white. Only pour 3/4 of the egg into the mixing bowl. Whisk until combined with the butter and sugar and then add the vanilla extract.
- Add the flour, cocoa powder, and salt to the mixture. Whisk until the flour and cocoa are all absorbed and you have a thick batter. Add the chocolate chips and stir until evenly distributed.
- Use a small cookie scoop to transfer the batter into six spots on the mini muffin pan. Bake for 10 minutes. The center of the top might still be slightly gooey but you don't want to over bake them. They will still continue to cook a little when removed from the oven.
- Allow to cool for a few minutes before flipping oven the pan. If any of the brownies seem stuck you can run a flat knife around the edges to help loosen them. Best enjoyed when still warm.
