I am so excited to share with you all this quick and easy salad that makes the perfect lunch. It’s packed full of healthy nutrients without compromising on flavor. I seriously ate it four days in a row last week and thoroughly enjoyed it each day. The crisp apples are paired with sliced avocado and turkey to make an extra filling salad that can keep you going through a long, hectic workday. Then top it with some creamy gorgonzola and tangy apple cider vinaigrette and you have a seriously delicious salad. Making your own salad dressings is a great way to cut back on waste when cooking for one and is actually really easy. Plus then you know exactly what you are eating, and it will stay nice and fresh. I hope you all enjoy this salad as much as I do. I have a feeling it’s going to be a new frequent additional to my lunchbox.
Apple Crisp Salad
Ingredients
Single Sized Salad
- 2 cups spring lettuce and spinach mix
- 1/2 apple
- 1/2 avocado
- 2 slices turkey
- 1-2 Tbsp gorgonzola cheese crumbles
Apple Cider Vinaigrette
- 1/4 cup olive oil
- 2 Tbsp apple cider vinegar
- 1.5 Tbsp dijon mustard
- 1 garlic clove minced
- 1 Tbsp honey
- 1/2 Tbsp lemon juice
- salt and pepper
Instructions
- To make the salad dressing pour olive oil, apple cider vinegar, mustard, lemon juice and honey into a small glass jar. Add the minced garlic and season with salt and pepper to taste. Tighten the lid and shake so that all the ingredients are combined. This will make enough dressing for 4 full sized salads.
- Prepare the salad toppings by slicing half an apple into thin slices. Cut the avocado in half and slice up the side without the pit. Keep the pit in the other half so it stays fresh for your next salad. Cut the turkey slices into bit sized pieces.
- Assemble the salad by placing the lettuce into a large bowl. Top with the apples, avocado and turkey. Sprinkle as much of the gorgonzola cheese as you like on top. Then drizzle with salad dressing so that everything is lightly coated. The dressing has a pretty bold flavor so start on the lighter side and then add more if you need it.
- Keep the dressing in the fridge for up to a week.
