Cherry Almond Overnight Oats: As a nurse who works 12 hour shifts I need a filling breakfast that can keep me going for hours. I love oatmeal but find it doesn’t quite stick with me for long enough. This overnight oats recipe is a bit more substantial as it includes yogurt and chia seeds. The chia seeds help bind everything together so it has a great texture and the sweet cherries give it a delicious flavor.
Cherry Almond Overnight Oats
Ingredients
- 1/2 cup old fashioned oats
- 1/2 cup almond milk
- 1 tsp maple syrup
- 1/4 cup vanilla yogurt
- 1 Tbsp chia seeds
- 1/2 cup frozen dark sweet cherries halved
- 1-2 Tbsp sliced almonds
Instructions
- In a small jar with a fitted lid add the oats, chia seeds, milk, yogurt and maple syrup. Stir until everything is combined.
- Add in the cherries and stir just until mixed throughout. Put lid on and keep in the fridge at least overnight until ready to eat.
- Top oats with sliced almonds before eating.
Tips:
– I defrost the cherries for a little bit before making to more easily slice them in half.
– You can sweeten this to your preference. I originally used agave but prefer it with maple syrup. You could also use honey.
– You can keep in the fridge for several days so you can make multiple jars at once or double recipe and put in a larger jar.
