Protein pancakes: I love pancakes and growing up one of my favorite things would be when my mom would make breakfast for dinner. My grandpa’s pancake recipe is a staple in our family and it’s absolutely delicious. I’ve adapted that recipe to be a bit healthier and to make a smaller number of pancakes. I also added in some protein powder to make this breakfast more filling.
Protein Pancakes
Quick and easy protein pancakes that taste like regular fluffy pancakes!
Servings 5 Pancakes
Ingredients
- 1 egg
- 1/2 Cup almond milk
- 1 Tbsp coconut oil
- 1 Tbsp sugar
- 1/2 Cup flour
- 1 Tsp baking powder
- 1/4 Tsp salt
- 1 Scoop vanilla protein powder
Instructions
- Heat a griddle or skillet over medium high heat.
- Add egg to a small bowl and whisk until slightly scrambled. Add in coconut oil, sugar and milk and whisk together. Be sure to melt your coconut oil first before adding.
- Add remaining ingredients and whisk until combined end there are no large lumps.
- Spray griddle with cooking spray. Pour 1/4 cup of batter into a circle on the griddle. Cook about 4 minutes on the first side until the under side is golden brown. Flip and cook 2-3 more minutes until cooked all the way through and golden on the other side. Repeat with remaining batter.
- Top with yogurt and fruit.
- When using protein powder I feel like you really need to make sure the pancake is cooked all the way through so it doesn’t taste like the powder. So error on the side of cooking a little longer.
- You can easily reheat extra pancakes in the toaster oven so that they stay a little crispy on the outside.
